i love roasted beets, mushrooms, green beans cauliflower, pepper, carrots, asparagus, onions... perhaps i should just say i love roasting whatever is in the veg drawer! just finished mushrooms, cauliflower, peppers -- smells as good as it tastes, and leftovers too! (well, SHOULD be leftovers if i don't keep telling myself "yumm... just a bit more of ___!")
today i finalized my plans to go on a float down the Main Salmon in late July... tell myself it will be an adventure even if my back is grumpy in a tent ;) -- willing to have a wee adventure, but bought trip insurance in case anything more serious comes along before or during. My third trip with Idaho River Journeys -- a group that Michael and Lauren introduced me to -- it is the best way i know to have a wilderness experience -- with someone else cooking and setting up the tents {you get to take them down in the morning}
still don't have the details of the wedding trip to Alaska sorted -- marked out the dates when i could have bone drugs and still do both river and wedding -- will mean i spend more time in AK before the wedding rather than after it -- which is a bit sad because it could be colder... some things don't even open until 4th june (Nick and Emily wed on the 7th)
in the middle of a quilt top that doesn't have a home, but i love the blocks anyway... anxiously waiting for the grey/polka dot one to get done at the stitcher so that i can bind it and send off to the UK... avoiding the churn dash blocks out of the grey/polka dot (they are all different sizes, so a bit of a puzzle to assemble... on the hunt for some fabric that looks like cat fur... and coordinates to go with the two sale pieces i've purchased (one in Cali, the other in Brigham... it will be a well-collected result i'm sure)

Deletei go anywhere from simple (olive oil and salt) to a full-on recipe -- but mostly tend to be simple or just add balsamic
